Hi Sem, from my experience with L128, a definate pair should be fine for a breeding attempt.

So long as you are sure there is one male and one female :-).

When my L128 bred there was one female and four males. Only the one male and female that spawned appeared to have any interaction with each other, the rest of the fish never got involved!

Good luck.

In theory you can but it is always better to start out with a group so a pair can be formed. Once you have a solid pair that are breeding, you can chose to set them up on their own.

Are they usually picky with their partners?

Probably not that picky when it comes to partners as water quality, tank setup, and filtration. Given that they rarely have bin spawned.
And I’d actually make sure that you have 2 hemi, and not one hemi and one bary
